Originally from a village in Valencia, Pepe Dasí began his professional career working under renowned chefs to learn the principals of Mediterranean cuisine: Martín Berasategui, Javier Olleros
(Culler de Pau), David Muñoz (StreetXO), and Ricard Camarena.
Eager to learn and discover new cultures, he traveled to other countries such as Australia, where he began his journey into Thai cuisine.
He worked in prestigious restaurants in Singapore, led his first Thai restaurant in Norway, and finally moved to Thailand, where he learned the foundations and principles of its culinary culture at
renowned establishments such as Nahm, 100 Mahaseth, 80/20, and even in the Isan region,
where he studied rthe northeastern regional cuisine
at Samuay & Sons.
He is currently recognized as a leading chef, having headed several of the city’s most renowned restaurants, creating a modern and fun concept of Thai cuisine with Mediterranean touches in
various well-known establishments such as Vilas, Jim Thompson,
and now working in a new exciting project, The River Club in Bangkok.
